Manuel harvest. Low yield of 18 hl / ha. Alcoholic fermentation (indigenous yeast) during 7 days. Maceration of 3 weeks with malolactic transformation. Maturing in new oak barrels for 22 months.

The low yield of  LE CHEVALIER ensures a remarkable concentration. Decanted many hours before or even some days  before, it will offer you a wealth remarkable aromas of vanilla, pepper, cocoa, blackberry, blackcurrant but also notes of kirsch and prunes all in the finesse and this with a beautiful freshness. Structured, warm and silky in the mouth its tannins will bring robustness and a impressive mouth lenght that ensures him a great potential of guard.
