Winemaking

Manuel harvest. Indigenous yeast alcoholic fermentation for 2 to 4 or more months, no chaptalization or temperature control. Aging 6 to 8 months in older oak barrel, 1 to 2 rackings, light filtration, low SO2.

Tasting

A therapeutic wine !!
Intensely yellow, this wine has a deep, concentrated bouquet of ripe stone fruits and cooked with herbal seeds. This wine needs a lot of time to open and needs to be decanted for hours or even days. Round mouth, rich and elegant, with a racy attack of acidity, a high density and a bright mineral purity and backbone, it is a powerful and firmly structured Chenin; it has a good grip in tannin and a long and intense finish. Still a little closed and bitter, but the concentration and the rich fruit are obvious. Breathtaking !
