Terroir

Made up of two small plots, one 50 years old, the other 30 years old.
Situated on a south-facing hillside that climbs very quickly: 320M at the bottom and 390M at the top of the plot, the situation is very sunny with a lot of wind.  A blue marl soil covered by the scree of the Vergisson rock, we find some iron oxide.

Winemaking

Hand picked, crushing, pneumatic pressing, full fermentation in Burgundy French oak barrels (15% of which are new). Aged for one year on fine lees. Bottling according to the lunar calendar by us, without filtration.

Tasting

Prince among Princes!
A cuvée that brilliantly reveals all the singularity and complexity of its terroir. The limestone strata give the wine a great minerality, fresh mentholated and liquorice notes combined with beautiful citrus fruit notes. Deeper and fatter, the marl and clay soils bring acidulous citrus fruit notes combined with buttery and caramelised notes. Intensely aromatic, this Pouilly-Fuissé with its harmonious structure and endless length has all the characteristics of a great Burgundy wine that will evolve very well over time.
