South facing plot of land, situated at a height of 320 m on a clay-limestone soil.
Manual harvest 100% destemming. The grapes are transported to the winery in small 20 kg crates to ensure optimum quality. Gravity vatting without pump. No pressing, juice is recovered by bleeding. Maceration for 36 hours.
Natural fermentation without yeasting, without fining, without sulphiting during 12 months in demi-muids of 600 litres of 3 wines without racking. Barrels made from a specific selection of oak staves from the Troncet forest. The barrels are made without burning "blond toast" wood.

With this very special terroir and the care given to the vines, we find a magnificent balance in the wines. Floral and white fruit (peach) sensations, roundness, depth and a perfect alchemy between the wine and the wood of the Foudre with a vanilla patina. The white wine remains fresh, gourmet while keeping its structure, minerality and aromatic complexity, so typical of the wines of the Gasqui terroir.

It is the perfect accompaniment to shellfish platters, mini tuna and mustard bites, cod with basil or scallop tartar with citrus fruits.
