Terroir

Anchored at the foot of the Roche de Vergisson, in the commune of Davayé. 2 plots on the same terroir with south-east exposure. One is 40 years old and the other is over 60 years old.
This parcel is literally adjacent to the future Premier Cru, the Clos sur la Roche, just on the border of Pouilly-Fuisse, the middle Jurassic monolith of Sur la Roche overlooking the village of Vergisson. A terroir of 165 million years old!
The largest plot is 40 years old, planted on a thin, highly calcareous soil, the other, a 60-year-old vine, lower on the hillside, has a more clayey soil with grapes that are often milleranded and concentrated.

Winemaking

100% fermented barrels; 100% malolactic fermentation. Aged 12 months in 228L French oak barrels. Batonnage (stirring) once every 10 days for 9 months on fine lees.

Tasting

165 million years old!
The marriage of these two vines gives an excellent wine with full, ample fruit, supported by an asserted minerality (fat chalk).
The maturity, always complete, is balanced by the roots and the character of the terroir.
A powerful wine with a refined expression at the same time, developing notes of apricots, crisp yellow apple and a touch of new oak on a beautiful minerality.
On the palate, the wine is medium to full-bodied, deep and textured, with considerable concentration and exceptional length with a dynamic freshness.
It is a muscular wine, and should evolve with interest for a decade!

Food pairing

This white wine goes wonderfully with seafood, fish, poultry and goat's cheese, with a small predisposition for creamy preparations.
