Winemaking

Manuel harvest. The grapes are gently whole-cluster pressed. In barrels, the must undergoes a slow and gentle fermentation by indigenous yeast strains to enhance the aromatic qualities and rich texture. The Malo-lactic fermentation is natural and the wine remains on its fine lees to preserve all the aromas during 20 months in oak barrels.

Surprising !
The cuvée is completed by other representative plots of different terroirs of Vergisson. The expression of the wine is always balanced with a silky texture and a fresh fruit like white peach but also subtle aromas of butter brioche, without any heaviness with a saline finish. Aerial wine and very delicate!
