Winemaking

Manuel harvest. The grapes are gently whole-cluster pressed. In barrels, the must undergoes a slow and gentle fermentation by indigenous yeast strains to enhance the aromatic qualities and rich texture. The Malo-lactic fermentation is natural and the wine remains on its fine lees to preserve all the aromas during 20 months in oak barrels.

Tasting

Mediterranean lady !
Historical plot of the estate which was the first isolated by Roger Saumaize in 1985. It is also the largest of the domain. In the middle of a biotope under Mediterranean influence, it has an early maturity. This cuvée stands out for its purity and its exceptional expression of the mineral. The mouth expresses great finesse with tension, precision and minerality, with nuances of hazelnuts and toasted almonds.
Dense, soft and mineral, this Clos on the Rock has a particular brilliance but also a beautiful richness of composition. Very great wine!
